A Single Gene Decides If Broccoli Tastes Bitter

One taste-receptor gene splits humanity into people who recoil at bitterness and people who barely notice it at all.

Why do some people gag at broccoli, kale and coffee while others happily munch them? Much of the answer sits in a single gene called TAS2R38, which builds a bitter-taste receptor on the tongue. That receptor detects compounds found in cruciferous vegetables, plus two synthetic test chemicals, PTC and PROP, that scientists use to probe your genetics.

The gene comes in two common versions. The “taster” form (PAV) builds a receptor that latches onto these bitter molecules tightly, so the vegetables taste harsh. The “non-taster” form (AVI) binds them weakly, so to those people the same chemicals taste of almost nothing.

About 75% of people can taste PTC; roughly 25% taste nothing at all.

Because tasting follows a dominant pattern, one copy of the taster allele is enough. People with two copies, often called supertasters, can find PROP almost unbearably bitter. The trait isn’t trivial: it shapes which foods we enjoy, avoid, and ultimately whether we eat our greens.
